TASTING NOTES

We currently have two whites and a rose in our range:

Sauvignon Blanc 2010
A brilliant pale straw coloured wine with tropical and stone fruit primary aromas supported by lifted floral notes. The mouth filling palate is balanced and refreshing with lingering fruit flavour. This wine is the perfect companion to seafood and Thai cuisine.

Reserve Sauvignon Blanc 2010
A beautifully made white wine handpicked and pressed then barrel fermented for 8 months in French oak barrels worth the wait. Drink on special occasions. This wine is the perfect companion to seafood and Thai cuisine.

Lumiere Rouge 2009
A delicious vibrant dry French style wine made from our spectacular Cabernet Sauvignon fruit. The palate is round, nicely balanced with clean blackberry fruit flavours and a hint of strawberry perfume. The long lasting finish is pleasantly dry an excellent lunchtime experience.

Our reds are:

Shiraz 2005
Medium bodied blackberry and pepper overtones great partner with Mediterranean cuisine or full bodied cheeses.

Cabernet Sauvignon Merlot 2008
The 2008 Cabernet Sauvignon Merlot is a blend of 65% Cabernet Sauvignon and 35% Merlot. It is a fruit driven style with characters of plum, cherry and cedar. The palate is medium bodied and fruity. A perfect partner to grilled lamb marinated with exotic spices and served on a bed of cous cous or rare steak seared with peppercorns in a red wine sauce over a combination of pureed sweet potato and pumpkin.

Cabernet Sauvignon 2005
Our French winemaker has made this premium red in a true Bordeaux style. It displays a typical smooth dry finish with characters of cassis, cherry, chocolate and mint. The palate is soft and round enjoyed now or cellar for a few years. Medal winner

Cabernet Sauvignon 2006
Our Cabernet Sauvignon has a delicious blend of mint and chocolate aromas and a fruit driven palate. It is perfect with lamb and as a lunchtime experience.

Cabernet Sauvignon 2007
This wine was made in a mixture of new and one year old oak barrels, it is superably balanced full bodied and a beautiful wine to cellar It won a medal in the Margaret River Show.

Reserve Cabernet Sauvignon 2004
This premium red is made from grapes grown during a perfect vintage stored in new French barrels for 18 months. It displays typical Margaret River characters of cassis, cherry, chocolate and mint. The palate is soft and fruity. This sophisticated wine will improve if cellared. Right now it will compliment any dish that craves for a rich red wine, Beef Wellington, Fillet Mignon or steak of your choice.

Reserve Cabernet Sauvignon 2006
Beautiful cabernet barrelled for two years in new French oak barrels with a hint of Tempranillo. This wine oozes sophistication and elegance. It is the true essence of our French winemaker, tres bon Severine.

Tempranillo 2009
A Spanish variety of red rich and full of flavours topped it’s class in the Margaret River wine show 2009.

Pineau des Charentes 2010
Brandy based fortified cabernet only 400 bottles made each year. It is a beautiful aperitif over crushed ice or just with cheeses after dinner.
